Spinach and Lentil Burger (Vegan)

By Eva Pérez

Cookware:

11 in Saladmaster Skillet

Ingredients :

  • 150 g of red lentils
  • 150 g washed and chopped spinach
  • 4 / 5 small sliced sliced shiitake mushrooms
  • 1 carrot in small pieces or with cone 1
  • 1 medium onion finely chopped or with the cone 2
  • 2 garlic cloves, finely chopped
  • 5 tablespoons toasted sesame seeds
  • Turmeric or sweet paprika
  • Extra virgin olive oil
  • Salt

Elaboration

  • Add water up to 3/4 parts in 3 Qt Saladmaster titanium Sauce Pan
  • Put it on medium heat
  • When it begins to boil, add the red lentils, wait again to boil and lower to minimum heat
  • Cook the lentils 20 minutes
  • After 15 minutes of cooking, add spinach
  • After 20 minutes, drain very well and reserve in a bowl (lentils must be able to be mashed by crushing them with a fork)
  • Heat the 10 in Saladmaster titanium skillet at medium temperature and add 3 tablespoons extra virgin olive oil
  • When the oil is hot add the onion and chopped garlic, lower to medium-low temperature and sauté 5 minutes stirring so that it does not brown too
  • Add mushrooms and carrot, stirring constantly, sauté until everything is golden
  • Put directly from the skillet all ingredients in the bowl with spinach and lentils
  • Give a point of salt
  • Add half a teaspoon of turmeric coffee (or sweet paprika), stir all the ingredients to integrate the flavors with a wooden spoon or shovel
  • Grind the sesame with a coffee grinder, or with more work with a mortar to leave a fine powder
  • Add the sesame powder to the bowl and stir again with the wooden spoon
  • It should remain a consistent mass, if it is very creamy, add more ground sesame until it stops being very creamy
  • Cool the dough in the refrigerator for at least 1 hour
  • Over time, proceed to shape the burgers with molds, or by hand
  • To cook them, preheat the 10 in skillet, when the drop d water slides on the surface, add a few drops of oil and distribute with the help of a brush or kitchen paper
  • Put the burger (or burgers) and keep the temperature
  • Do not touch or try to flip until it can take off effortlessly, go testing with the wooden spoon that moves without any effort
  • Turn and brown on the other side
  • Serve the burger to taste, on bread, on a plate with vegetables, with tomato and sauces…

Options:

  • In this recipe, as long as you use the frying pans as an iron, you have to make a perfect preheat, and do not touch what we cook until it moves alone without the slightest effort
  • Other mushrooms or mushrooms may be used
  • If other types of lentils are used, cook them until they are soft to puree them
  • For more daring flavors, experiment with more garlic, adding chopped chili pepper and/or spices to taste
